Hwangdo Yogurt Cake

Unlike a rich-tasting pound cake (which this looks like) the Hwangdo yogurt cake has a nice, light flavor. Sometimes simple really is the best. The crumbs sprinkled on top provide a variety of textures.This cake is perfect as a gift when you don't have a lot of time to prepare something elaborate.

 

 

 

Before baking the cake, you need to line the mold with parchment paper to make it easy to separate.

1. Cut the parchment paper lengthwise to match the height of the side of the mold.

2. Fold the parchment paper inward about 2cm, make slits on the bottom and follow the shape of the mold.

 

 

3. Place the bottom of the mold on parchment paper, trace with a pencil, and then cut with scissors 0.2cm inside the pencil line.

4. Insert the cut-out parchment paper on the bottom of the mold so that the parchment paper holds its shape well.

 

 

Hwangdo Yogurt Cake (No. 2 Heart Cake)

*75g butter / 90g unsweetened spoonable yogurt / 1 can of yellow peaches

* 150g cake flour / 30g almond flour / 3g baking powder

*80g unrefined sugar / 1g salt / 3 eggs

 

 

Preparation process

* Leave the butter at room temperature for 1-2 hours (your finger should be able to make an indentation if you press).

* Leave eggs and yogurt at room temperature for 1-2 hours (to prevent the yogurt from separating).

* Slice the peaches.

* Divide the flour, sugar and salt into separate bowls.

 

 

1. Whisk soft butter with a hand mixer, then add sugar and salt before mixing.

2. Beat the eggs at room temperature and mix them in the mixer bowl 2 to 3 times.

3. Add the flour and when it is 80% mixed with a spatula, add the yogurt.

 

 

4. Add yogurt to make the dough thick. 

5. Put the dough into the heart mold and smooth it out evenly with a scraper.

 

 

6. Lay out the sliced ​​peaches evenly on top.

7. Sprinkle the prepared filling on top.

 

8. Bake in an oven preheated to 170'c for 35 to 40 minutes (varies depending on oven).

9. Before taking it out, poke the center of the cake with a chopstick and if batter comes out, bake for 3 to 5 minutes more.
